About Us
At Brekky’s, we’re serving more than bold food and great coffee—we’re building something bigger: a community, a brand, and a vision worth franchising

How It
All Started
Stacy’s claim to fame began over eight years ago as the pioneer of the Coffee & Nosh food truck, one of the first in the region. Before that, she launched Java Hub, a brick-and-mortar non-profit café dedicated to people and purpose. Today, she also owns Coffee King, a coffee roasting and wholesale distribution company that supplies cafés and restaurants with beans, equipment, and expertise. With deep experience in menu creation, operations, and scaling, Stacy brings creativity and bold vision to everything Brekky’s offers.
At the same time, Ike was carving his own entrepreneurial path. Just months before Stacy finalized her purchase of Coffee King, he acquired his own electronics business. Their timing mirrored one another, and so did their passion for business. Through friendship and collaboration, Ike and Stacy began strategizing revenue growth for Coffee King—an effort that planted the seed for what would eventually become Brekky’s.
The Partnership
What started as friendship quickly flourished into a partnership. Stacy brings the energy, vision, and bold ideas. Ike balances with strategy, HR expertise, executive training, and team-building know-how. She sprints—he’s steady. She dreams in color—he builds the blueprint. Together, they map out every step, fueled by espresso (Stacy) and lemonade (Ike).
